Chef Klidi
From the seaside streets of Rimini in Italy’s Emilia-Romagna, Chef Klidi Lazimi grew up watching generations before him season, cure, and cook with care. Food wasn’t just sustenance; it was identity.
He trained at IPSARR Scuola Alberghiera, where the craft of technique met the poetry of flavour. After graduating, he refined his skills at Bella Rimini and La Brace, learning the rhythms of coastal Italian cuisine, seafood, and wood-fire cooking. La Brace deepened his instinct for balancing the sea’s subtlety with the land’s boldness.
In Milan, he trained under Gualtiero Marchesi, the visionary behind modern Italian cuisine, whose focus on simplicity, ingredients, and presentation shaped Klidi’s approach.
After moving to Canada, he worked at Il Ponte before joining Speducci Mercatto, where he rose through every station to become Executive Chef. His food blends rustic Italian roots with refined precision, guided by seasonality and detail.
Known for his humour and mentorship, Klidi often shares stories from Rimini and Milan to help young cooks understand the why behind each dish. As one guest put it, “The food felt like coming home, with technique and heart in every bite.”
His personality shines in La Cucina di Klidi on Instagram, where his passion and humour bring each dish to life.
